3. Mix wet ingredients
Add the sliced butter to a saucepan. Set the heat to medium and stir occasionally until the butter melts, foams, and begins to bubble (this should take about 2 1/2 to 3 minutes).
Once the browning is complete, immediately transfer the butter to a medium bowl. Refrigerate until it’s no longer warm, about 10 minutes.

Continue heating for another 2 to 3 minutes, stirring often until the butter deepens in color and has a nutty aroma. Turn off the heat just before the butter starts foaming up the sides of the pan.

1. Brown the butter
In a medium bowl, whisk the flour, salt, and baking soda until fully combined.

2. Whisk dry ingredients

Add the eggs, butter, cane sugar, brown sugar, and vanilla. Mix on medium speed with an electric mixer until well combined and you see small ripples form, about 30 seconds. If mixing by hand, whisk vigorously for about 45 seconds.
4. Fold in dry ingredients

Mixing with a silicone spatula, slowly fold the dry mixture to the wet mixture. Fold until just combined. The dough should be thick but still soft -- not dense or heavy.

5. The chocolate
Surprisingly, the best chocolate chip cookies don't actually use chocolate chips -- they use chopped up chocolate bars. Bars contain more cocoa butter, which melts into rich, gooey pockets and makes each bite extra chocolatey.
Coarsely chop the chocolate and gently combine into the dough.

6. Baking
Add parchment paper to a cookie sheet. This will prevent the cookies from sticking and give them a softer texture.
Next scoop out the dough into about 1/4 cup sized balls and arrange them on a cookie sheet, spacing them 3 inches (7.5cm) apart to give them plenty of room to spread out.
Preheat the oven to 350ºF (175ºC) and place the rack in the center of the oven.

Bake for 14 to 16 minutes, until the edges are golden brown and slightly firm, but the center remains gooey and soft (bake for 16 minutes for a crispier edge).
7. The eating
Try, if possible, to let them cool for about 10 minutes.
